Finally some alternatives to my daily beans and lentils When I became vegan two months ago, I thought I would just eat beans and lentils to get my protein intake and I would be fine. Well, I was fine but after about a month I just became sick of pretty much eating the same food every day. I needed some inspiration. Matt’s book gave me plenty of options to spice things up and use alternatives to my so “beloved” lentils :) My personal favorites are the chickpea crêpes with spinach and mushrooms as well as the banana cashew protein dessert…

Tasty recipes, but prep time is decieving First and foremost, the recipes are tasty. At least for the ones I have made so far. Full disclosure, I am slowly dipping my toe into the world of “plant based diets”, particularly for workouts. So I like where the flavors are going. Also I am father of three. So time is a big deal for me.Here is my gripe. While all the recipes give a caption for prep time and cooking time, it’s totally inaccurate…unless you have all of those particular items pre-made.
